- 2 cups water
- 1 package sugar-free vanilla jello
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 cup whipped cream
- 1/2 cup cream cheese
- 1/4 cup sweetener of choice
- 1 teaspoon vanilla extract
Instructions
- Boil 1 cup of water in a saucepan.
- Add the sugar-free vanilla jello and stir until dissolved.
- Remove from heat and add another cup of cold water.
- In a separate bowl, blend the whipped cream, cream cheese, sweetener, and vanilla extract until smooth.
- Combine the jello mixture with the cream mixture.
- Pour half of the mixture into a jello mold and refrigerate until firm.
- Add a layer of mixed berries on top of the set jello.
- Top with the remaining jello mixture and refrigerate until fully set.
- Once set, remove from the mold and serve chilled.
Notes
- This recipe can be modified with different berries.
- For a more intense flavor, consider adding a splash of lemon juice.
