A delicious and refreshing low carb dessert featuring berries and a creamy vanilla jello ring.

Ingredients

  • 2 cups water
  • 1 package sugar-free vanilla jello
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 cup whipped cream
  • 1/2 cup cream cheese
  • 1/4 cup sweetener of choice
  • 1 teaspoon vanilla extract

Instructions

  1. Boil 1 cup of water in a saucepan.
  2. Add the sugar-free vanilla jello and stir until dissolved.
  3. Remove from heat and add another cup of cold water.
  4. In a separate bowl, blend the whipped cream, cream cheese, sweetener, and vanilla extract until smooth.
  5. Combine the jello mixture with the cream mixture.
  6. Pour half of the mixture into a jello mold and refrigerate until firm.
  7. Add a layer of mixed berries on top of the set jello.
  8. Top with the remaining jello mixture and refrigerate until fully set.
  9. Once set, remove from the mold and serve chilled.

Notes

  • This recipe can be modified with different berries.
  • For a more intense flavor, consider adding a splash of lemon juice.
  • Ensure the cream cheese is softened for easy blending.
