A delicious and creamy light coconut flan that is a perfect dessert for any occasion.

Ingredients

  • 1 can coconut milk
  • 1 cup low-fat milk
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1/4 cup water (for caramel)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine sugar and water over medium heat until it melts and turns golden brown to make caramel.
  3. Pour the caramel into the bottom of a flan mold or individual ramekins.
  4. In a blender, mix coconut milk, low-fat milk, eggs, and vanilla until smooth.
  5. Pour the mixture over the caramel in the mold.
  6. Place the flan mold in a larger baking dish and fill the baking dish with hot water halfway up the sides of the flan mold.
  7. Bake for about 50 minutes, or until set.
  8. Let cool, then refrigerate for at least 4 hours before serving.
  9. To serve, invert onto a plate and enjoy!

Notes

  • Best served chilled.
  • Can be topped with fresh fruit or whipped cream.
  • This flan can be made a day in advance for convenience.
