- 1 can coconut milk
- 1 cup low-fat milk
- 1 cup granulated sugar
- 3 large eggs
- 1 tablespoon vanilla extract
- 1/4 cup water (for caramel)
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine sugar and water over medium heat until it melts and turns golden brown to make caramel.
- Pour the caramel into the bottom of a flan mold or individual ramekins.
- In a blender, mix coconut milk, low-fat milk, eggs, and vanilla until smooth.
- Pour the mixture over the caramel in the mold.
- Place the flan mold in a larger baking dish and fill the baking dish with hot water halfway up the sides of the flan mold.
- Bake for about 50 minutes, or until set.
- Let cool, then refrigerate for at least 4 hours before serving.
- To serve, invert onto a plate and enjoy!
Notes
- Best served chilled.
- Can be topped with fresh fruit or whipped cream.
- This flan can be made a day in advance for convenience.
