Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the pureed strawberries, lemon juice, and vanilla extract.
- In another bowl, whisk egg whites until foamy; gradually add granulated sugar and continue whisking until stiff peaks form.
- Gently fold the strawberry mixture into the egg whites.
- In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
- Fold the whipped cream into the strawberry mixture carefully.
- Spoon the mixture into ramekins and bake for 15-20 minutes until puffed and lightly browned.
- Serve immediately for best results.
Notes
- For an extra flavor, consider adding a splash of orange liqueur to the strawberry mixture.
- Make sure to serve the soufflés right after baking as they tend to deflate quickly.
