A refreshing and tangy lemon tart with a buttery crust and a luscious filling.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 cup granulated sugar
  • ½ cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • ¼ teaspoon salt
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and powdered sugar, then cut in butter until crumbly.
  3. Press the mixture into the bottom and up the sides of a tart pan.
  4. Bake for 15-20 minutes until lightly golden.
  5. In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, salt, and cornstarch until smooth.
  6. Pour the lemon filling into the baked crust.
  7. Bake for an additional 25-30 minutes until the filling is set.
  8. Allow to cool before serving.
