Delicious and savory Lebanese spinach pies filled with fresh spinach, herbs, and spices.

Ingredients

  • 2 cups fresh spinach
  • 1 onion, chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon allspice
  • 1 package phyllo dough
  • 1 egg, beaten (for brushing)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, heat olive oil and sauté the chopped onion until translucent.
  3. Add spinach, salt, pepper, and allspice. Cook until spinach wilts.
  4. Remove from heat and stir in lemon juice.
  5. On a clean surface, layer phyllo dough and cut into circles.
  6. Place a spoonful of the spinach mixture in the center and fold over, sealing the edges.
  7. Brush with beaten egg and place on a baking sheet.
  8. Bake for 20-25 minutes or until golden brown.

Notes

  • For a vegan version, omit the egg wash or use a plant-based alternative.
  • These pies can be frozen before baking for later enjoyment.
