- 2 cups fresh spinach
- 1 onion, chopped
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon allspice
- 1 package phyllo dough
- 1 egg, beaten (for brushing)
Instructions
- Preheat the oven to 375°F (190°C).
- In a pan, heat olive oil and sauté the chopped onion until translucent.
- Add spinach, salt, pepper, and allspice. Cook until spinach wilts.
- Remove from heat and stir in lemon juice.
- On a clean surface, layer phyllo dough and cut into circles.
- Place a spoonful of the spinach mixture in the center and fold over, sealing the edges.
- Brush with beaten egg and place on a baking sheet.
- Bake for 20-25 minutes or until golden brown.
Notes
- For a vegan version, omit the egg wash or use a plant-based alternative.
- These pies can be frozen before baking for later enjoyment.
