- 1 cup brown lentils
- 1 cup basmati rice
- 4 cups vegetable broth
- 2 large onions, sliced
- 1/4 cup olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the lentils and add them to a pot with vegetable broth. Bring to a boil and then simmer for 15-20 minutes until tender.
- In a separate pot, cook the basmati rice according to package instructions.
- While the rice is cooking, heat olive oil in a pan over medium heat and add sliced onions.
- Cook the onions slowly until they are caramelized, stirring occasionally.
- Once the lentils and rice are done, combine them in a large serving bowl.
- Top with caramelized onions, sprinkle with cumin, coriander, salt, and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- Can be served warm or at room temperature.
- Leftovers can be stored in the refrigerator for up to 3 days.
