A delicious Middle Eastern dish combining lentils and rice, topped with sweet caramelized onions.

Ingredients

  • 1 cup brown lentils
  • 1 cup basmati rice
  • 4 cups vegetable broth
  • 2 large onions, sliced
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the lentils and add them to a pot with vegetable broth. Bring to a boil and then simmer for 15-20 minutes until tender.
  2. In a separate pot, cook the basmati rice according to package instructions.
  3. While the rice is cooking, heat olive oil in a pan over medium heat and add sliced onions.
  4. Cook the onions slowly until they are caramelized, stirring occasionally.
  5. Once the lentils and rice are done, combine them in a large serving bowl.
  6. Top with caramelized onions, sprinkle with cumin, coriander, salt, and pepper to taste.
  7. Garnish with fresh parsley before serving.

Notes

  • Can be served warm or at room temperature.
  • Leftovers can be stored in the refrigerator for up to 3 days.
