- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon fresh lavender
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a bowl, mix flour and powdered sugar. Add butter and blend until crumbly.
- Press the mixture into the bottom of the prepared baking dish.
- Bake for 15 minutes until golden.
- In another bowl, whisk together granulated sugar, eggs, lemon juice, lavender, baking powder, and salt.
- Pour the filling over the baked crust.
- Bake for an additional 20-25 minutes until set.
- Allow to cool, then dust with powdered sugar before serving.
Notes
- For more flavor, let the lavender steep in the lemon juice for an hour before using.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
