These Lavender Lemon Bars are a refreshing and unique dessert combining the flavors of tart lemon and fragrant lavender.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon fresh lavender
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix flour and powdered sugar. Add butter and blend until crumbly.
  3. Press the mixture into the bottom of the prepared baking dish.
  4. Bake for 15 minutes until golden.
  5. In another bowl, whisk together granulated sugar, eggs, lemon juice, lavender, baking powder, and salt.
  6. Pour the filling over the baked crust.
  7. Bake for an additional 20-25 minutes until set.
  8. Allow to cool, then dust with powdered sugar before serving.

Notes

  • For more flavor, let the lavender steep in the lemon juice for an hour before using.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
