Ingredients

- 1 cup grey peas
- 4 slices bacon
- 1 onion, chopped
- 2 tablespoons butter
- 2 cups water
- Salt and pepper to taste
Instructions
- Soak the grey peas overnight.
- Drain and rinse peas, then combine with water in a pot.
- Bring to a boil and simmer until tender, about 1 hour.
- Meanwhile, cook the bacon in a skillet until crispy. Remove and set aside.
- In the bacon fat, sauté the chopped onion until translucent.
- Add the cooked peas to the skillet, stir to combine.
- Crumble the bacon over the top, season with salt and pepper, and serve warm.
Notes
- For a vegetarian version, omit the bacon and use vegetable broth.
- This dish pairs well with rye bread.
