A traditional Latvian dish made with grey peas and crispy bacon.

Ingredients

  • 1 cup grey peas
  • 4 slices bacon
  • 1 onion, chopped
  • 2 tablespoons butter
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. Soak the grey peas overnight.
  2. Drain and rinse peas, then combine with water in a pot.
  3. Bring to a boil and simmer until tender, about 1 hour.
  4. Meanwhile, cook the bacon in a skillet until crispy. Remove and set aside.
  5. In the bacon fat, sauté the chopped onion until translucent.
  6. Add the cooked peas to the skillet, stir to combine.
  7. Crumble the bacon over the top, season with salt and pepper, and serve warm.

Notes

  • For a vegetarian version, omit the bacon and use vegetable broth.
  • This dish pairs well with rye bread.
