- 1 pound beef chuck, cut into chunks
- 2 cups cauliflower rice
- 1 cup beef broth
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger, minced
- 1 tablespoon erythritol (or preferred sweetener)
- 1 teaspoon black pepper
- 8 large lettuce leaves
Instructions
- In a slow cooker, add beef chuck, beef broth, soy sauce, sesame oil, garlic powder, ginger, erythritol, and black pepper.
- Cook on low for 8 hours or until the beef is tender.
- Remove beef, shred it with two forks, and return it to the slow cooker for additional flavor absorption.
- Prepare the cauliflower rice as per instructions and set aside.
- To assemble, place a generous amount of beef and cauliflower rice in each lettuce leaf.
- Wrap the lettuce around the filling and serve immediately.
Notes
- For added flavor, marinate the beef overnight.
- You can also add additional vegetables like bell peppers or green onions.
