- 2 cups fresh spinach
- 1 cup ricotta cheese
- 1 cup feta cheese
- 2 eggs
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large zucchini, grated
- 1/2 cup almond flour
- 1/4 cup parmesan cheese
- 1 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine spinach, ricotta, feta, eggs, olive oil, oregano, salt, and pepper.
- Add grated zucchini, almond flour, parmesan, and baking powder. Mix until well combined.
- Transfer the mixture to a greased pie dish and smooth the top.
- Bake for 30-35 minutes, or until golden brown.
- Allow to cool slightly before slicing and serving.
Notes
- For added flavor, you can include chopped onions or garlic.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
