Ingredients

  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup feta cheese
  • 2 eggs
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large zucchini, grated
  • 1/2 cup almond flour
  • 1/4 cup parmesan cheese
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine spinach, ricotta, feta, eggs, olive oil, oregano, salt, and pepper.
  3. Add grated zucchini, almond flour, parmesan, and baking powder. Mix until well combined.
  4. Transfer the mixture to a greased pie dish and smooth the top.
  5. Bake for 30-35 minutes, or until golden brown.
  6. Allow to cool slightly before slicing and serving.

Notes
