A low-carb version of a classic dirty rice dish, made with ground meat and cauliflower rice.

Ingredients

  • 1 pound ground beef
  • 1 pound cauliflower rice
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons soy sauce
  • 4 green onions, sliced

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion, celery, and green bell pepper; sauté until soft.
  3. Stir in garlic and ground beef; cook until beef is browned.
  4. Add cauliflower rice, Cajun seasoning, paprika, salt, black pepper, and cayenne; stir to combine.
  5. Cook for 5-7 minutes until cauliflower is tender.
  6. Stir in soy sauce and green onions before serving.

Notes

  • For a spicier kick, add more cayenne pepper.
  • Serve with a side salad for a complete meal.
