- 1 tbsp coconut oil
Instructions
- In a bowl, mix the cream cheese, erythritol, and vanilla extract until smooth.
- Chill the mixture in the refrigerator for 30 minutes.
- Once chilled, scoop out small amounts and roll them into balls.
- In a microwave-safe bowl, melt the dark chocolate chips with coconut oil until smooth.
- Dip each truffle in the melted chocolate, then place on a baking sheet lined with parchment paper.
- Refrigerate until the chocolate has hardened.
