Delicious keto-friendly dessert truffles made with cream cheese and a chocolate coating.

Ingredients

  • 1/2 cup powdered erythritol
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1 cup sugar-free dark chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. In a bowl, mix the cream cheese, erythritol, and vanilla extract until smooth.
  2. Chill the mixture in the refrigerator for 30 minutes.
  3. Once chilled, scoop out small amounts and roll them into balls.
  4. In a microwave-safe bowl, melt the dark chocolate chips with coconut oil until smooth.
  5. Dip each truffle in the melted chocolate, then place on a baking sheet lined with parchment paper.
  6. Refrigerate until the chocolate has hardened.
