A rich and creamy chocolate silk pie that is low in carbs and perfect for keto diets.

Ingredients

  • 1 1/2 cups almond flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup erythritol or preferred sweetener
  • 1/2 cup butter, melted
  • 2 cups heavy cream
  • 1 cup sugar-free dark chocolate chips
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, and melted butter.
  3. Press the mixture into the bottom of a pie pan to form the crust and bake for 10 minutes. Let cool.
  4. In a saucepan, melt the sugar-free dark chocolate chips over low heat.
  5. In a bowl, whisk together egg yolks, vanilla extract, and salt.
  6. Gradually add the melted chocolate to the egg mixture and mix until smooth.
  7. In another bowl, whip the heavy cream until soft peaks form.
  8. Fold the whipped cream into the chocolate mixture until combined.
  9. Pour the chocolate filling into the cooled crust and refrigerate for at least 4 hours to set.
  10. Serve chilled and enjoy!
