Ingredients

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup butter, melted
  • 1/3 cup erythritol sweetener
  • 1 tsp vanilla extract
  • 2 cups heavy cream
  • 8 oz cream cheese, softened
  • 1/2 cup sugar-free chocolate pudding mix
  • 1 cup water
  • 1/4 cup unsweetened cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, cocoa powder, melted butter, erythritol, and vanilla until it forms a dough.
  3. Press the mixture into a greased baking pan and bake for 15-20 minutes. Let it cool.
  4. In another bowl, whip the heavy cream until stiff peaks form. Set aside.
  5. In a separate bowl, mix softened cream cheese with sugar-free pudding mix and water until smooth.
  6. Layer half the whipped cream over the almond flour base.
  7. Spread the cream cheese mixture evenly on top, followed by the remaining whipped cream.
  8. Dust with cocoa powder before refrigerating for at least 4 hours to set.

Notes

  • For a richer flavor, add a few drops of peppermint extract.
  • This dessert can be made a day in advance.
