- 2 cups almond flour
 - 1/2 cup unsweetened cocoa powder
 - 1/2 cup butter, melted
 - 1/3 cup erythritol sweetener
 - 1 tsp vanilla extract
 - 2 cups heavy cream
 - 8 oz cream cheese, softened
 - 1/2 cup sugar-free chocolate pudding mix
 - 1 cup water
 - 1/4 cup unsweetened cocoa powder for dusting
 
Instructions
- Preheat the oven to 350°F (175°C).
 - In a bowl, mix almond flour, cocoa powder, melted butter, erythritol, and vanilla until it forms a dough.
 - Press the mixture into a greased baking pan and bake for 15-20 minutes. Let it cool.
 - In another bowl, whip the heavy cream until stiff peaks form. Set aside.
 - In a separate bowl, mix softened cream cheese with sugar-free pudding mix and water until smooth.
 - Layer half the whipped cream over the almond flour base.
 - Spread the cream cheese mixture evenly on top, followed by the remaining whipped cream.
 - Dust with cocoa powder before refrigerating for at least 4 hours to set.
 
Notes
- For a richer flavor, add a few drops of peppermint extract.
 - This dessert can be made a day in advance.
