A hearty and delicious low-carb soup that combines all the flavors of a cheeseburger without the carbs!

Ingredients

  • 1 pound ground beef
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups riced cauliflower
  • 1 cup shredded cheddar cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried mustard
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add ground beef and cook until browned.
  3. Add onions and garlic, cooking until softened.
  4. Stir in beef broth, heavy cream, and Worcestershire sauce.
  5. Bring the mixture to a simmer.
  6. Add riced cauliflower, paprika, dried mustard, salt, and pepper.
  7. Simmer for 10-15 minutes until cauliflower is tender.
  8. Stir in cheddar cheese until melted.
