Instructions
- Preheat your oven to 350°F and prepare a baking sheet with parchment paper.
- In a separate bowl, combine the flour, baking powder, baking soda, and salt, mixing them well.
- In a large bowl, beat the softened butter and granulated sugar together until fluffy and pale, about 2-3 minutes. Stir in the flavored gelatin until fully incorporated.
- Add the egg, vanilla extract, and almond extract (if using) to the mixture, blending until smooth.
- Gradually fold in the dry ingredients until just combined, being careful not to overmix.
- Take spoonfuls of the dough and roll them into small balls. Coat each ball in granulated sugar before placing them on the prepared baking sheet, leaving about 2 inches of space between each one.
- Bake for 10-12 minutes, or until the edges start to turn a light golden brown. Allow the cookies to rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
