Instructions

  1. Preheat your oven to 350°F and prepare a baking sheet with parchment paper.
  2. In a separate bowl, combine the flour, baking powder, baking soda, and salt, mixing them well.
  3. In a large bowl, beat the softened butter and granulated sugar together until fluffy and pale, about 2-3 minutes. Stir in the flavored gelatin until fully incorporated.
  4. Add the egg, vanilla extract, and almond extract (if using) to the mixture, blending until smooth.
  5. Gradually fold in the dry ingredients until just combined, being careful not to overmix.
  6. Take spoonfuls of the dough and roll them into small balls. Coat each ball in granulated sugar before placing them on the prepared baking sheet, leaving about 2 inches of space between each one.
  7. Bake for 10-12 minutes, or until the edges start to turn a light golden brown. Allow the cookies to rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
