A delicious and moist Japanese Matcha Cake that combines green tea flavor with a light and fluffy texture.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup matcha powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, whisk together the flour, matcha powder, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Alternately add the dry ingredients and milk, starting and ending with the dry ingredients.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cake cool before removing from the pan.
