- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese, softened
- 1/2 cup ricotta cheese
- 2 cups crushed vanilla wafers
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut, shredded
- 1/2 cup walnuts, chopped
Instructions
- In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- In another bowl, combine the cream cheese and ricotta cheese, mixing until smooth.
- Fold the whipped cream into the cheese mixture until well combined.
- Stir in the crushed vanilla wafers, coconut, and walnuts.
- Form the mixture into small balls and freeze for 1 hour.
- Melt the chocolate chips in a microwave or double boiler.
- Dip each frozen ball into the melted chocolate and let cool on a parchment-lined sheet.
- Refrigerate until set, then serve chilled.
Notes
- For a more intense chocolate flavor, use dark chocolate for dipping.
- These can be made a day in advance for best results.
- Store leftovers in an airtight container in the refrigerator.
