These delicious tarts combine sweet caramelized onions with creamy goat cheese for a perfect appetizer or snack.

Ingredients

  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 sheet puff pastry, thawed
  • 4 ounces goat cheese, crumbled
  • 1 tablespoon fresh thyme leaves
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and sugar, and cook until caramelized, about 20-25 minutes.
  3. Roll out the puff pastry and cut into squares or rounds. Place on a baking sheet.
  4. Spread the caramelized onions evenly on the pastry, then sprinkle with goat cheese and thyme.
  5. Brush the edges of the pastry with the beaten egg, and season with salt and pepper.
  6. Bake for 15-20 minutes or until the pastry is golden brown.
  7. Serve warm.

Notes

  • For a twist, add some balsamic reduction on top before serving.
  • These tarts can be made ahead of time and baked just before serving.
