- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 sheet puff pastry, thawed
- 4 ounces goat cheese, crumbled
- 1 tablespoon fresh thyme leaves
- 1 egg, beaten
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add onions and sugar, and cook until caramelized, about 20-25 minutes.
- Roll out the puff pastry and cut into squares or rounds. Place on a baking sheet.
- Spread the caramelized onions evenly on the pastry, then sprinkle with goat cheese and thyme.
- Brush the edges of the pastry with the beaten egg, and season with salt and pepper.
- Bake for 15-20 minutes or until the pastry is golden brown.
- Serve warm.
Notes
- For a twist, add some balsamic reduction on top before serving.
- These tarts can be made ahead of time and baked just before serving.
