Instructions
- Grate the potatoes and squeeze out excess moisture.
- In a bowl, combine grated potatoes, onion, eggs, flour, baking powder, salt, and pepper.
- Add in the chopped bacon and mix until well combined.
- Preheat a skillet over medium heat and melt 1 tablespoon of butter.
- Spoon batter onto the skillet to form pancakes, cooking until golden brown on each side.
- Repeat with remaining butter and batter.
- Serve warm with your favorite toppings.
