Ingredients

  • 2 cups cooked jasmine rice
  • 1 tablespoon vegetable oil
  • 2 eggs, beaten
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 skewers of grilled chicken or beef, cut into pieces

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion and garlic, cooking until softened.
  3. Push the onions and garlic to one side and pour in the beaten eggs, scrambling them until cooked.
  4. Add the cooked rice, mixed vegetables, soy sauce, sweet soy sauce, salt, and pepper. Stir-fry everything together until heated through.
  5. Serve the fried rice hot, topped with grilled skewers.

Notes

  • For extra flavor, consider adding chili sauce to the rice.
  • Use leftover rice for the best texture in fried rice.
