- 2 cups cooked jasmine rice
- 1 tablespoon vegetable oil
- 2 eggs, beaten
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 tablespoons soy sauce
- 1 tablespoon sweet soy sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 skewers of grilled chicken or beef, cut into pieces
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and garlic, cooking until softened.
- Push the onions and garlic to one side and pour in the beaten eggs, scrambling them until cooked.
- Add the cooked rice, mixed vegetables, soy sauce, sweet soy sauce, salt, and pepper. Stir-fry everything together until heated through.
- Serve the fried rice hot, topped with grilled skewers.
Notes
- For extra flavor, consider adding chili sauce to the rice.
- Use leftover rice for the best texture in fried rice.
