Instructions
- In a medium bowl, mix the Icelandic skyr with vanilla extract if using plain skyr. Stir until well combined.
- In serving glasses or bowls, layer the skyr mixture at the bottom, followed by a layer of mixed Arctic berries.
- Add a layer of granola on top of the berries, then repeat the layers until the glasses are filled, finishing with a layer of berries and a sprinkle of granola on top.
- Drizzle honey or maple syrup over the top if desired.
- Garnish with fresh mint leaves for an extra touch.
- Serve immediately or refrigerate for up to 1 hour before serving for a chilled parfait.
