Ingredients

  • 1 cup mixed Arctic berries (such as blueberries, lingonberries, and cloudberries)
  • 1 cup granola (your choice)
  • 2 tablespoons honey or maple syrup (optional)
  • 1 teaspoon vanilla extract (if using plain skyr)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium bowl, mix the Icelandic skyr with vanilla extract if using plain skyr. Stir until well combined.
  2. In serving glasses or bowls, layer the skyr mixture at the bottom, followed by a layer of mixed Arctic berries.
  3. Add a layer of granola on top of the berries, then repeat the layers until the glasses are filled, finishing with a layer of berries and a sprinkle of granola on top.
  4. Drizzle honey or maple syrup over the top if desired.
  5. Garnish with fresh mint leaves for an extra touch.
