- 3 ripe bananas
- 1 cup sugar
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup ube halaya (ube jam)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, mash the bananas until smooth.
- Add sugar and melted butter to the mashed bananas, mixing well.
- Incorporate the eggs and vanilla extract into the mixture.
- In a separate bowl, combine flour, baking soda, and salt.
- Slowly mix the dry ingredients into the wet mixture until just combined.
- In a separate bowl, take half the batter and mix in the ube halaya.
- Spoon alternating layers of the banana batter and the ube batter into the prepared loaf pan.
- Use a knife to swirl the batters together for a marbled effect.
- Bake for 60-70 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
Notes
- For added flavor, consider adding chopped nuts or chocolate chips to the batter.
