  • 3 ripe bananas
  • 1 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup ube halaya (ube jam)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add sugar and melted butter to the mashed bananas, mixing well.
  4. Incorporate the eggs and vanilla extract into the mixture.
  5. In a separate bowl, combine flour, baking soda, and salt.
  6. Slowly mix the dry ingredients into the wet mixture until just combined.
  7. In a separate bowl, take half the batter and mix in the ube halaya.
  8. Spoon alternating layers of the banana batter and the ube batter into the prepared loaf pan.
  9. Use a knife to swirl the batters together for a marbled effect.
  10. Bake for 60-70 minutes, or until a toothpick comes out clean.
  11. Let cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
