This marbled ube banana bread combines the rich flavors of ube with the classic taste of banana bread for a delightful dessert.

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup ube halaya
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, cream together the butter and sugar.
  3. Add in the eggs and vanilla, mixing well.
  4. In another bowl, combine the mashed bananas and ube halaya.
  5. Mix the dry ingredients together in a separate bowl.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the banana and ube mixture.
  7. Pour half of the batter into the loaf pan, then dollop in the remaining ube halaya and swirl it gently.
  8. Bake for 60-70 minutes until a toothpick comes out clean.
  9. Allow to cool before slicing.

Notes

  • Store leftover bread in an airtight container at room temperature.
  • For added richness, serve with butter.
  • Can be frozen for up to 3 months.
