- 2 ripe bananas, mashed
- 1/2 cup ube halaya
- 1/2 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, cream together the butter and sugar.
- Add in the eggs and vanilla, mixing well.
- In another bowl, combine the mashed bananas and ube halaya.
- Mix the dry ingredients together in a separate bowl.
- Gradually add the dry ingredients to the wet ingredients, alternating with the banana and ube mixture.
- Pour half of the batter into the loaf pan, then dollop in the remaining ube halaya and swirl it gently.
- Bake for 60-70 minutes until a toothpick comes out clean.
- Allow to cool before slicing.
Notes
- Store leftover bread in an airtight container at room temperature.
- For added richness, serve with butter.
- Can be frozen for up to 3 months.
