Ingredients
Scale
- 1 pound fresh ginger root
- 3 cups water
- 2 cups granulated sugar
- 1/2 cup additional sugar for coating
Instructions
- Peel the ginger and slice it into thin pieces.
- In a pot, combine the ginger and water.
- Bring to a boil, then reduce heat and simmer for about 30 minutes.
- Drain the ginger and reserve the cooking water.
- In the same pot, combine the reserved water and 2 cups of sugar, bring to a boil.
- Add the ginger to the pot and simmer until the ginger looks translucent and the syrup thickens, about 45 minutes.
- Drain the ginger again and roll in the additional sugar to coat.
- Spread the candied ginger on a baking sheet to cool completely.
Notes
- Store the candied ginger in an airtight container for up to 6 months.
- You can use the leftover syrup in drinks or desserts.
