Ingredients

  • 1 pound fresh ginger root
  • 3 cups water
  • 2 cups granulated sugar
  • 1/2 cup additional sugar for coating

Instructions

  1. Peel the ginger and slice it into thin pieces.
  2. In a pot, combine the ginger and water.
  3. Bring to a boil, then reduce heat and simmer for about 30 minutes.
  4. Drain the ginger and reserve the cooking water.
  5. In the same pot, combine the reserved water and 2 cups of sugar, bring to a boil.
  6. Add the ginger to the pot and simmer until the ginger looks translucent and the syrup thickens, about 45 minutes.
  7. Drain the ginger again and roll in the additional sugar to coat.
  8. Spread the candied ginger on a baking sheet to cool completely.

Notes

  • Store the candied ginger in an airtight container for up to 6 months.
  • You can use the leftover syrup in drinks or desserts.
