- 1 red bell pepper
- 1 tomato
- 1/4 cup almonds
- 2 cloves garlic
- 2 tablespoons red wine vinegar
- 1/4 cup olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Roast the red bell pepper and tomato until charred.
- Allow to cool, then peel and remove seeds.
- In a blender, combine roasted pepper, tomato, almonds, garlic, vinegar, paprika, salt, and pepper.
- Blend until smooth, then drizzle in olive oil while blending.
- Taste and adjust seasoning as needed.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- Can be served cold or at room temperature.
