Maakouda are delicious Algerian potato cakes, often seasoned with spices and herbs, perfect as a snack or appetizer.

Ingredients

  • 1 pound potatoes
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped
  • 1 egg
  • 1 cup breadcrumbs
  • Salt to taste
  • Oil for frying

Instructions

  1. Peel and boil the potatoes until soft, then mash them.
  2. In a pan, sauté the onions and garlic until golden brown.
  3. Add the sautéed onions, cumin, paprika, and parsley to the mashed potatoes and mix well.
  4. Let the mixture cool, then shape it into small patties.
  5. Dip each patty in beaten egg and coat with breadcrumbs.
  6. Heat oil in a frying pan and fry the patties until golden brown on both sides.
  7. Remove from oil and drain the excess oil on paper towels.

Notes

  • These can be served with a dipping sauce of your choice.
  • Make sure the oil is hot enough for frying to achieve a crispy texture.
