- 1 sheet puff pastry
- 3 leeks, cleaned and sliced
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs
- 1/2 cup heavy cream
- 1/2 cup grated cheese (Gruyère or similar)
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and place it in a tart pan.
- In a pan, heat olive oil and sauté leeks until softened.
- Add thyme, parsley, salt, and pepper to the leeks, mixing well.
- In a bowl, whisk together eggs and heavy cream.
- Add the sautéed leeks and cheese to the egg mixture.
- Pour the mixture into the pastry shell.
- Bake for 25-30 minutes or until golden brown.
- Let cool slightly before serving.

- Can be served warm or at room temperature.
- Feel free to substitute with other herbs as per your preference.
