Delicious and flaky tarts filled with herbed leeks, perfect as a starter or main dish.

Ingredients

  • 1 sheet puff pastry
  • 3 leeks, cleaned and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs
  • 1/2 cup heavy cream
  • 1/2 cup grated cheese (Gruyère or similar)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and place it in a tart pan.
  3. In a pan, heat olive oil and sauté leeks until softened.
  4. Add thyme, parsley, salt, and pepper to the leeks, mixing well.
  5. In a bowl, whisk together eggs and heavy cream.
  6. Add the sautéed leeks and cheese to the egg mixture.
  7. Pour the mixture into the pastry shell.
  8. Bake for 25-30 minutes or until golden brown.
  9. Let cool slightly before serving.

Notes

  • Can be served warm or at room temperature.
