- 2 pounds beef tenderloin
 - 2 tablespoons olive oil
 - 2 teaspoons kosher salt
 - 1 teaspoon black pepper
 - 2 tablespoons fresh rosemary, chopped
 - 2 tablespoons fresh thyme, chopped
 - 1 cup red wine
 - 1 cup beef broth
 - 2 tablespoons butter
 
Instructions
- Preheat your oven to 400°F (200°C).
 - Season the beef tenderloin with olive oil, salt, and pepper.
 - Coat the tenderloin with the chopped herbs.
 - In a hot skillet, sear the tenderloin on all sides.
 - Transfer the tenderloin to the oven and roast for 25-30 minutes.
 - Remove the tenderloin and let it rest.
 - In the same skillet, add red wine and beef broth, scraping up any browned bits.
 - Reduce the sauce by half, then whisk in butter before serving.

- Let the beef rest for at least 10 minutes before slicing to retain juices.
 - Pair with mashed potatoes or a fresh green salad for a complete meal.
