A succulent beef tenderloin coated with a blend of fresh herbs and served with a rich red wine sauce.

  • Total Time: 50 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 2 pounds beef tenderloin
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 cup red wine
  • 1 cup beef broth
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the beef tenderloin with olive oil, salt, and pepper.
  3. Coat the tenderloin with the chopped herbs.
  4. In a hot skillet, sear the tenderloin on all sides.
  5. Transfer the tenderloin to the oven and roast for 25-30 minutes.
  6. Remove the tenderloin and let it rest.
  7. In the same skillet, add red wine and beef broth, scraping up any browned bits.
  8. Reduce the sauce by half, then whisk in butter before serving.

Notes

  • Let the beef rest for at least 10 minutes before slicing to retain juices.
  • Pair with mashed potatoes or a fresh green salad for a complete meal.
