Ingredients

  • 1 cup cooked brown rice
  • 1 can tuna, drained
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large mixing bowl, combine the cooked brown rice and drained tuna.
  2. Add the cherry tomatoes, red onion, cucumber, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve chilled or at room temperature.
