- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
- 1/4 cup peanut butter
- 1/4 cup coconut flakes
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine almond flour, melted coconut oil, maple syrup, vanilla extract, and salt.
- Scoop the mixture into a muffin tin, pressing firmly to form cups.
- Bake for 10-12 minutes until golden.
- Remove from oven and let cool.
- Melt dark chocolate and mix with peanut butter.
- Fill the cooled cookie cups with the chocolate-peanut butter mixture.
- Top with coconut flakes.
- Chill in the refrigerator until set.
Notes
- Store in an airtight container in the fridge.
- Substitute almond flour with any nut flour if desired.
