Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips
  • 1/4 cup peanut butter
  • 1/4 cup coconut flakes

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine almond flour, melted coconut oil, maple syrup, vanilla extract, and salt.
  3. Scoop the mixture into a muffin tin, pressing firmly to form cups.
  4. Bake for 10-12 minutes until golden.
  5. Remove from oven and let cool.
  6. Melt dark chocolate and mix with peanut butter.
  7. Fill the cooled cookie cups with the chocolate-peanut butter mixture.
  8. Top with coconut flakes.
  9. Chill in the refrigerator until set.
