Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, combine the rolled oats, grated carrots, maple syrup, applesauce, vegetable oil, and vanilla extract.
- In another bowl, whisk together the baking powder, baking soda, cinnamon, nutmeg, and salt.
- Pour the dry ingredients into the wet ingredients and mix until combined. Fold in the chopped walnuts.
- Transfer the batter to the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool before slicing and serving.
