- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 cup mixed nuts (chopped)
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine the rolled oats, almond butter, honey or maple syrup, chopped nuts, pumpkin seeds, sunflower seeds, vanilla extract, cinnamon, and salt.
- Mix well until all ingredients are fully combined.
- Using a tablespoon, scoop out the mixture and form small balls or patties.
- Place them on the prepared baking sheet, spacing them apart.
- Bake for about 10-12 minutes or until golden brown.
- Allow to cool before serving or storing.
Notes
- Store cookies in an airtight container for up to one week.
- Feel free to customize the nuts and seeds according to your preference.
- These cookies can also be frozen for longer storage.
