- 1 cup taro, peeled and grated
- 1 cup fresh pineapple, finely chopped
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 cup coconut milk
- 1 large egg
- Oil for frying
Instructions
- In a large mixing bowl, combine the grated taro, chopped pineapple, flour, sugar, salt, and baking powder. Mix well to combine.
- In a separate bowl, whisk together the coconut milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat about 1 inch of oil in a deep skillet or frying pan over medium heat.
- Once the oil is hot, drop spoonfuls of the batter into the oil, being careful not to overcrowd the pan.
- Fry for about 3-4 minutes on each side or until golden brown.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve warm, optionally dusted with powdered sugar or drizzled with honey.
Notes
- For a tropical twist, try adding shredded coconut to the batter.
- You can substitute the pineapple with mango or banana for different flavors.
- If you prefer a healthier option, bake the fritters at 375°F for 15-20 minutes, flipping halfway through, until golden brown.
