- 2 pounds chicken, cut into pieces
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 potatoes, diced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 4 cups chicken broth
- 1/2 cup pumpkin seeds
- 1/4 cup sesame seeds
- Salt to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until fragrant.
- Stir in the chicken pieces and brown on all sides.
- Add carrots and potatoes, followed by spices, stirring to combine.
- Pour in the chicken broth, bring to a boil.
- Reduce heat and let simmer for 30 minutes.
- Stir in pumpkin seeds and sesame seeds and cook for another 10 minutes.
- Season with salt to taste and serve warm.
