  • 2 carrots, chopped
  • 2 potatoes, diced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups chicken broth
  • 1/2 cup pumpkin seeds
  • 1/4 cup sesame seeds
  • Salt to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Stir in the chicken pieces and brown on all sides.
  4. Add carrots and potatoes, followed by spices, stirring to combine.
  5. Pour in the chicken broth, bring to a boil.
  6. Reduce heat and let simmer for 30 minutes.
  7. Stir in pumpkin seeds and sesame seeds and cook for another 10 minutes.
  8. Season with salt to taste and serve warm.
