A light and airy soufflé made with Gruyère cheese and chives.

Ingredients

  • 2 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1 cup grated Gruyère cheese
  • 3 large eggs, separated
  • 1/4 cup chopped fresh chives
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a soufflé dish with butter and dust with flour.
  3. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  4. Gradually whisk in milk until smooth. Continue cooking until thickened.
  5. Remove from heat and stir in cheese, egg yolks, chives, salt, pepper, and cayenne.
  6. In a separate bowl, beat egg whites until stiff peaks form.
  7. Fold egg whites into the cheese mixture gently.
  8. Pour the mixture into the prepared dish and bake for 25-30 minutes, until puffed and golden.
  9. Serve immediately.

Notes

  • For a richer flavor, use aged Gruyère cheese.
  • Make sure to serve immediately as the soufflé will deflate quickly.
