- 2 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 1 cup milk
- 1 cup grated Gruyère cheese
- 3 large eggs, separated
- 1/4 cup chopped fresh chives
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a soufflé dish with butter and dust with flour.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Continue cooking until thickened.
- Remove from heat and stir in cheese, egg yolks, chives, salt, pepper, and cayenne.
- In a separate bowl, beat egg whites until stiff peaks form.
- Fold egg whites into the cheese mixture gently.
- Pour the mixture into the prepared dish and bake for 25-30 minutes, until puffed and golden.
- Serve immediately.
Notes
- For a richer flavor, use aged Gruyère cheese.
- Make sure to serve immediately as the soufflé will deflate quickly.
