A delightful salad featuring grilled peaches and halloumi cheese, drizzled with balsamic glaze.

Ingredients

  • 3 ripe peaches, halved and pitted
  • 8 ounces halloumi cheese, cut into ½-inch thick slices
  • 4 cups mixed salad greens (such as arugula, spinach, and romaine)
  • ¼ cup walnuts, lightly toasted
  • ¼ cup crumbled feta cheese
  • ¼ cup balsamic glaze
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat your grill to a medium-high setting.
  2. Lightly coat the peach halves with olive oil and sprinkle them with salt and pepper.
  3. Place the peaches cut side down on the grill and cook for about 4-5 minutes until grill marks appear and they soften slightly.
  4. Add the halloumi slices to the grill and cook for about 2-3 minutes on each side until golden brown and slightly gooey.
  5. In a large mixing bowl, toss together the mixed salad greens, toasted walnuts, and crumbled feta.
  6. Remove the grilled peaches and halloumi from the heat and allow them to cool slightly. Cut the peaches into wedges.
  7. Incorporate the grilled peaches and halloumi into the salad mixture.
  8. Drizzle the balsamic glaze over the top and gently mix everything together.
  9. Serve the salad right away, adding extra balsamic glaze on top if desired.

Notes

  • For a vegan option, substitute halloumi with grilled tofu.
  • Feel free to add other nuts or seeds for extra crunch.
