- 3 ripe peaches, halved and pitted
- 8 ounces halloumi cheese, cut into ½-inch thick slices
- 4 cups mixed salad greens (such as arugula, spinach, and romaine)
- ¼ cup walnuts, lightly toasted
- ¼ cup crumbled feta cheese
- ¼ cup balsamic glaze
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat your grill to a medium-high setting.
- Lightly coat the peach halves with olive oil and sprinkle them with salt and pepper.
- Place the peaches cut side down on the grill and cook for about 4-5 minutes until grill marks appear and they soften slightly.
- Add the halloumi slices to the grill and cook for about 2-3 minutes on each side until golden brown and slightly gooey.
- In a large mixing bowl, toss together the mixed salad greens, toasted walnuts, and crumbled feta.
- Remove the grilled peaches and halloumi from the heat and allow them to cool slightly. Cut the peaches into wedges.
- Incorporate the grilled peaches and halloumi into the salad mixture.
- Drizzle the balsamic glaze over the top and gently mix everything together.
- Serve the salad right away, adding extra balsamic glaze on top if desired.
Notes
- For a vegan option, substitute halloumi with grilled tofu.
- Feel free to add other nuts or seeds for extra crunch.
