Ingredients

  • 4 leeks, cleaned and sliced
  • 1 cup rice
  • 4 cups vegetable broth
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the leeks and cook until softened.
  2. Add the rice and stir for a couple of minutes until it’s coated with oil.
  3. Pour in the vegetable broth and bring to a simmer. Season with salt and pepper.
  4. Cover and reduce heat to low, cooking for about 20 minutes or until the rice is tender.
  5. Stir in the fresh dill before serving.
