This rich and indulgent sticky toffee pudding is a classic British dessert, combining a moist sponge with a luscious toffee sauce.

Ingredients

  • 200 grams pitted dates
  • 300 ml boiling water
  • 1 teaspoon baking soda
  • 100 grams unsalted butter
  • 150 grams brown sugar
  • 2 large eggs
  • 200 grams all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 150 ml heavy cream
  • 200 grams dark brown sugar

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Prepare the dates by chopping them and soaking them in boiling water with baking soda.
  3. In a mixing bowl, cream the butter and brown sugar until fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Fold in the flour, then add the soaked dates and mix until just combined.
  6. Pour the batter into a greased baking dish and bake for 30-35 minutes.
  7. For the sauce, combine the cream and dark brown sugar in a saucepan and heat until boiling.
  8. Once the pudding is baked, pour the warm toffee sauce over it before serving.

Notes

  • Serve with vanilla ice cream or clotted cream for an extra indulgence.
