- 200 grams pitted dates
- 300 ml boiling water
- 1 teaspoon baking soda
- 100 grams unsalted butter
- 150 grams brown sugar
- 2 large eggs
- 200 grams all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 150 ml heavy cream
- 200 grams dark brown sugar
Instructions
- Preheat your oven to 180°C (350°F).
- Prepare the dates by chopping them and soaking them in boiling water with baking soda.
- In a mixing bowl, cream the butter and brown sugar until fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Fold in the flour, then add the soaked dates and mix until just combined.
- Pour the batter into a greased baking dish and bake for 30-35 minutes.
- For the sauce, combine the cream and dark brown sugar in a saucepan and heat until boiling.
- Once the pudding is baked, pour the warm toffee sauce over it before serving.
Notes
- Serve with vanilla ice cream or clotted cream for an extra indulgence.
- Can be made a day ahead and reheated before serving.
