- 1 tablespoon olive oil
- 1 large onion, sliced
- 2 potatoes, peeled and thinly sliced
- 200 grams strong cheddar cheese, grated
- 1 teaspoon mustard powder
- 1 egg, beaten
- 2 sheets shortcrust pastry
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Preheat the oven to 180°C (356°F).
- Heat the olive oil in a frying pan over medium heat and add the sliced onion. Cook until softened.
- Add the sliced potatoes to the onions and cook until tender.
- In a bowl, combine the cheese, mustard powder, and cooked onion and potato mixture.
- Roll out one sheet of pastry and place it in a pie dish.
- Fill the pastry with the cheese and onion mixture.
- Cover with the second sheet of pastry and seal the edges.
- Brush the top with beaten egg.
- Bake in the preheated oven for 30-35 minutes or until golden brown.
- Allow to cool slightly before serving.
