Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 2 potatoes, peeled and thinly sliced
  • 200 grams strong cheddar cheese, grated
  • 1 teaspoon mustard powder
  • 1 egg, beaten
  • 2 sheets shortcrust pastry
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. Preheat the oven to 180°C (356°F).
  2. Heat the olive oil in a frying pan over medium heat and add the sliced onion. Cook until softened.
  3. Add the sliced potatoes to the onions and cook until tender.
  4. In a bowl, combine the cheese, mustard powder, and cooked onion and potato mixture.
  5. Roll out one sheet of pastry and place it in a pie dish.
  6. Fill the pastry with the cheese and onion mixture.
  7. Cover with the second sheet of pastry and seal the edges.
  8. Brush the top with beaten egg.
  9. Bake in the preheated oven for 30-35 minutes or until golden brown.
  10. Allow to cool slightly before serving.
