Ingredients

  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups crushed pineapple, drained
  • 1 cup shredded coconut
  • 1 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually blend the dry ingredients into the wet mixture.
  6. Fold in the crushed pineapple, shredded coconut, and nuts if using.
  7. Drop by tablespoonfuls onto ungreased baking sheets.
  8. Bake for 12-15 minutes or until lightly golden. Let cool on wire racks.

Notes

  • For a more intense pineapple flavor, use fresh crushed pineapple instead of canned.
