This Gingerbread Layer Cake is a festive dessert perfect for the holidays.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups brown sugar, packed
  • 3 large eggs
  • 1 cup molasses

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a separate bowl, cream the butter and brown sugar together until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition. Then mix in the molasses.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the batter evenly between two greased cake pans.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Once cooled, frost with your favorite icing.
