Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add red cabbage and stir to combine.
- Pour in apple cider vinegar, add sugar, salt, and pepper.
- Stir in apples, raisins, and caraway seeds if using.
- Cover and simmer on low heat for about 45 minutes, stirring occasionally.
- Taste and adjust seasoning as necessary before serving.
