Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and dusting them with flour.
  2. In a spacious bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Incorporate the eggs, milk, canola oil, and vanilla extract into the dry mixture, mixing on medium speed for about 2 minutes until smooth.
  4. Gradually add the boiling water to the batter, stirring gently until you achieve a silky consistency.
  5. Divide the batter evenly between the two prepared pans.
  6. Bake for approximately 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in their pans for 10 minutes before transferring them to wire racks to cool completely.
  8. Once cooled, carefully slice each cake in half horizontally to create four layers.
  9. On a serving platter, position the first layer and generously spread whipped cream atop it, followed by a layer of Morello cherries.
  10. Repeat this layering process with the remaining cake layers, ensuring to finish with a fluffy layer of whipped cream on top.
  11. Adorn the cake with chocolate curls and any leftover cherries for a stunning presentation.
