- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 tablespoon culinary lavender buds
- 1 teaspoon vanilla extract
- 1 package (17.3 ounces) frozen puff pastry (2 sheets), thawed
- 1/2 cup honey
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1/4 cup water
- Fresh lavender sprigs for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out each sheet of puff pastry on a lightly floured surface to smooth out any creases. Cut each sheet into 3 equal rectangles. Place the rectangles on the prepared baking sheet and prick them all over with a fork to prevent puffing.
- Bake the puff pastry for 15-20 minutes or until golden brown and crisp. Remove from the oven and let cool completely.
- In a small saucepan, combine the honey, granulated sugar, cornstarch, and water. Heat over medium heat, stirring until the mixture thickens and bubbles. Remove from heat and let cool.
- In a mixing bowl, combine the heavy cream, powdered sugar, lavender buds, and vanilla extract. Whip until soft peaks form.
- To assemble, place one piece of puff pastry on a serving plate. Spread a layer of the lavender whipped cream on top, followed by a drizzle of the honey mixture. Repeat with another layer of puff pastry, cream, and honey. Top with a final piece of puff pastry.
- Dust the top layer with powdered sugar and garnish with fresh lavender sprigs if desired. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
- For a citrus twist, add the zest of one lemon or orange to the whipped cream.
- Substitute the lavender with other edible flowers like rose or chamomile for a different flavor profile.
