A delicious and easy-to-make frittata featuring foraged wild garlic and mushrooms, perfect for any meal.

  • Total Time: 35 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 8 large eggs
  • 1 cup wild garlic leaves, finely chopped (or 1/2 cup scallions as an alternative)
  • 1 cup sliced mushrooms (like cremini or button)
  • 1/2 cup milk
  • 1 cup grated cheese (cheddar or mozzarella work well)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for decoration (optional)

Instructions

  1. Begin by heating your oven to 375°F (190°C).
  2. In a mixing bowl, beat the eggs together with the milk, adding a pinch of salt and pepper. Fold in the chopped wild garlic and grated cheese until evenly mixed.
  3. In a large skillet suitable for the oven, warm the olive oil over medium heat. Add the sliced mushrooms and sauté for around 5 minutes until they soften and turn golden.
  4. Carefully pour the egg mixture over the mushrooms in the skillet. Allow it to cook on the stovetop for 2-3 minutes, gently stirring to distribute the ingredients evenly.
  5. Place the skillet in the oven and bake for 15-20 minutes, or until the frittata is puffed up and golden brown on the surface.
  6. Once baked, take it out of the oven and let it sit for a few minutes before slicing into wedges. Optionally, top with fresh herbs for a burst of color and flavor.

Notes

  • For a heartier dish, consider adding cooked bacon or sausage to the mix.
  • Feel free to swap in other vegetables like spinach, bell peppers, or zucchini for a personalized touch.
