- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup granulated sugar (for coating)
- 2 teaspoons ground cinnamon (for coating)
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, mix together the flour, baking powder, salt, ground cinnamon, and sugar.
- In another bowl, whisk together the melted butter, eggs, milk, and vanilla extract.
- Combine the wet and dry ingredients until just mixed.
- Fill the muffin tins about 2/3 full with the batter.
- Bake for 18-20 minutes until golden and a toothpick comes out clean.
- While muffins cool, mix the sugar and cinnamon for the coating.
- Dunk the warm muffins in melted butter and then in the cinnamon sugar mixture.
- Serve warm and enjoy!
Notes
- For a richer flavor, use brown sugar instead of granulated sugar in the batter.
- These muffins are best served warm but can be stored in an airtight container for a few days.
