Deliciously fluffy muffins coated in cinnamon sugar, perfect for breakfast or a sweet treat!

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, mix together the flour, baking powder, salt, ground cinnamon, and sugar.
  3. In another bowl, whisk together the melted butter, eggs, milk, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fill the muffin tins about 2/3 full with the batter.
  6. Bake for 18-20 minutes until golden and a toothpick comes out clean.
  7. While muffins cool, mix the sugar and cinnamon for the coating.
  8. Dunk the warm muffins in melted butter and then in the cinnamon sugar mixture.
  9. Serve warm and enjoy!

Notes

  • For a richer flavor, use brown sugar instead of granulated sugar in the batter.
  • These muffins are best served warm but can be stored in an airtight container for a few days.
