A delightful and unique dessert featuring a buttery rye crust filled with sweet cloudberry jam.

Ingredients

  • 1 ½ cups rye flour
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup cloudberry jam (or substitute with raspberry or lingonberry jam)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch tart pan with removable bottom.
  2. In a mixing bowl, combine the rye flour, all-purpose flour, and salt.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the flour mixture to the butter mixture, mixing until a dough forms.
  6. Press the dough evenly into the bottom and up the sides of the prepared tart pan.
  7. Prick the bottom with a fork to prevent bubbling.
  8. In a small bowl, mix the cloudberry jam with cornstarch and lemon juice until smooth.
  9. Spread the jam mixture evenly over the crust.
  10. Bake in the preheated oven for 25-30 minutes, or until the crust is lightly golden and the jam is bubbly.
  11. Allow the tart to cool in the pan for 10 minutes before removing the sides of the pan.
  12. Let it cool completely on a wire rack.
  13. Serve at room temperature or chilled.

Notes

  • For a richer flavor, consider adding a pinch of cardamom to the dough.
  • If cloudberries are unavailable, feel free to use your favorite berry jam for a delicious twist.
