- 1 ½ cups rye flour
- ½ cup all-purpose flour
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup cloudberry jam (or substitute with raspberry or lingonberry jam)
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F. Grease a 9-inch tart pan with removable bottom.
- In a mixing bowl, combine the rye flour, all-purpose flour, and salt.
- In another bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the flour mixture to the butter mixture, mixing until a dough forms.
- Press the dough evenly into the bottom and up the sides of the prepared tart pan.
- Prick the bottom with a fork to prevent bubbling.
- In a small bowl, mix the cloudberry jam with cornstarch and lemon juice until smooth.
- Spread the jam mixture evenly over the crust.
- Bake in the preheated oven for 25-30 minutes, or until the crust is lightly golden and the jam is bubbly.
- Allow the tart to cool in the pan for 10 minutes before removing the sides of the pan.
- Let it cool completely on a wire rack.
- Serve at room temperature or chilled.
Notes
- For a richer flavor, consider adding a pinch of cardamom to the dough.
- If cloudberries are unavailable, feel free to use your favorite berry jam for a delicious twist.
