- 1 cup hazelnuts
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 2 tablespoons espresso powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a food processor, combine the hazelnuts and rolled oats. Pulse until finely chopped.
- Add almond butter, honey, espresso powder, vanilla extract, and salt. Process until well combined.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- Feel free to substitute other nut butters if desired.
