  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup cooled espresso or strong brewed coffee
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped nuts (optional, such as almonds or walnuts)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a separate bowl, combine the flour, baking powder, salt, cardamom, and cocoa powder, mixing well.
  3. In a large mixing bowl, whisk together the granulated sugar, brown sugar, eggs, vanilla extract, and cooled espresso until smooth and slightly airy.
  4. Gradually incorporate the dry mixture into the wet ingredients, stirring gently until just combined.
  5. If desired, fold in the chocolate chips and nuts.
  6. Split the dough into two equal portions and form each into a log approximately 12 inches long and 2 inches wide on the prepared baking sheet.
  7. Bake the logs for about 25-30 minutes until firm when touched.
  8. Allow to cool for about 10 minutes before slicing each log diagonally into 1/2-inch thick pieces.
  9. Arrange the slices cut side down on the baking sheet and return them to the oven for another 15-20 minutes, flipping halfway through.
  10. Transfer the biscotti to a wire rack to cool completely before enjoying.
